I’ve made my fair share of treks to various food trucks including the one that started the gourmet food truck craze, “Kogi.” Recently, I ate from the “The Grill Cheese Truck.” I had a delicious cheese mac and rib sandwich. Then I thought, if I were going to make this an Asian grilled cheese, how would I make it. To replace the macaroni, I have used Ramen. What goes good with Ramen and will give this sandwich a kick, Kimchi. I know this sound a little different — and it is — but in the end, it is a very tasty sandwich. Here’s my version of an Asian noodle grilled cheese sandwich.

Ingredients (Makes 1 sandwich)
1/3 package instant ramen
1/2 ramen seasonings
2 tablespoons kimchi, chopped and squeezed of excess kimchi juice
1 tablespoons oil for cooking
2 tablespoon butter, softened
2 thick slices bread
Slice of mozzarella or jack cheese
Slice of American or Cheddar cheese

Directions
Bring a pot of water to a boil over high heat. Drop the ramen noodles in and cook until the ramen noodles are soft. Drain the ramen noodles. Place noodles in a bowl and season with ramen packet. Set aside to prepare sandwich. Heat olive oil in a frying pan over low heat. Spread the outside of both slices of bread with softened butter. Place both slices of bread buttered-side down in the oil in the pan. Pile one slice with mozzarella/jack cheese. Pile the other slice of bread with American/Cheddar cheese. Cook until bread is toasted and cheese has melted. Remove the grilled bread with cheese to a plate or cutting board. Pile as much ramen noodles on one slice of the bread as you like. Add chopped kimchi on top. Close the sandwich with the other slice of grilled bread and cheese. Press together firmly.
