PeanutButterBarsLet me introduce myself. I’m frazgo, lower case intentional. I’m a photographer and blogger. “frazgo” is a branding thingy based on an email addy that an employer gave me years ago. Its a mash up of my first and last name. My friend since College Ruth Waytz is a branding guru and we came up with using it as a way to make me googleable and different than a bajillion other bloggers out there.

Since this blog is dedicated to recipes of Mom’s for Caroline, I’ll do the same. And if you stretch the truth a bit its actually healty for you. Well, Special K is rice which is a grain and its marketed as a diet food. Peanut butter is a healty source of protein thats been pulverised so you don’t have to chew it. Chocolate is from a plant, and salads are plants. This is really nothing more than a diet peanut and grain salad. See I can justify it (or most anything).

Stupid Easy is a key category in most of what I do. Especially in the kitchen. These bars fall into that category. If you can bring something to a boil and stir you have it made. Can you press in a time and the start button on a microwave? If so you are really set. These bars are that easy.
Even stupid easy has its pitfalls. Medium heat may take longer to bring your syrup to a boil, but you reduce the risk of scorching or over cooking. Things like a little corn syrup in the ganache keeps it shiny and from setting hard. It all goes to making the perfect bar as opposed to a rock you can’t chew or cut through.

Melting chocolate in a microwave is easy if you do it in small steps. Try and do it all in one long blast and you’ll burn your chocolate instead of melting it. Also, for reasons I don’t claim to understand, Ghiradelli chocolate needs to be avoided. I had it arc and scorch on me, my sister, not so lucky she wasn’t watching and it arced and ignited burning the roof of her microwave. Best to stick to the lesser brands as you don’t have the fireworks show.

1 1/2 cup sugar
1 1/2 cup corn syrup
1 1/2 cup peanut butter
1/2 teaspoon salt
6 cups Special K cereal
6 oz. bag semi sweet chocolate chips
6 oz. butter scotch chips
1 tablespoon corn syrup

Butter a 13 X 9″ baking dish. Place corn syrup, sugar and salt in a heavy non-reactive pan such as stainless steel over medium heat. Stir slowly until sugar is dissolved. Bring to a boil and cook 2 minutes. Turn off heat and stir in 1 1/2 c peanut butter. Place Special K into a large mixing bowl and pour the hot peanut butter syrup over the cereal. Toss to coat. Press cereal into a prepared pan. Allow to cool to room temperature. In a large microwave bowl pour chocolate chips and butter scotch chips and 1 T corn sryup. Microwave on high 30 seconds. Stir. Return to microwave and give it another 30 seconds on high. Stir, if not smooth, return to microwave and give it 15 seconds on high. Stir until smooth. Pour the peanut butter ganache over the cooled Special K and spread evenly to the corners. Cool completely, cut into bars…makes about 3 dozen generous sized bars.
