Their Japanese cucumber plant has produced several cucumbers for me to enjoy this summer. They say there are several health benefits to eating cucumbers. That’s good because I intend incorporate them into all kinds of cusine! For this salad, I used what was already in my refrigerator. It’s simple to make, but friends will think you worked hard at preparing because it is so tasty.

Ingredients
2 tomatoes, sliced
2 medium cucumbers, peeled, seeded and sliced
1/2 red onion, thinly sliced
8 oz. olives, sliced
6 tablespoons balsamic dressing
1/2 cup feta cheese, crumbled

Directions
In medium bowl combine tomatoes, cucumber, onion and olives. Add balsamic dressing. Toss to coat. Sprinkle on feta and serve.
