I am fortunate to have neighbors who loves to garden. I am the recipient of their garden’s bounty. Their Japanese cucumber plant has produced several cucumbers for me to enjoy this summer. They say there are several health benefits to eating cucumbers. That’s good because I intend incorporate them into all kinds of cusine! For this salad, I used what was already in my refrigerator. It’s simple to make, but friends will think you worked hard at preparing because it is so tasty.
2 tomatoes, sliced
2 medium cucumbers, peeled, seeded and sliced
1/2 red onion, thinly sliced
8 oz. olives, sliced
6 tablespoons balsamic dressing
1/2 cup feta cheese, crumbled
In medium bowl combine tomatoes, cucumber, onion and olives. Add balsamic dressing. Toss to coat. Sprinkle on feta and serve.
